Jonah’s Fennel Apple Salad
SERVES: 2 TO 3 TIME: 10 MINUTES
Ingredients
2 fennel bulbs
2 crisp and crunchy apples
Hunk of hard cheese, such as parmesan or romano
¼ cup olive oil
Juice of 1 lemon
Salt and pepper to taste (approximately ½ teaspoon salt and ¼ teaspoon pepper)
Instructions
Use a mandoline or knife to very thinly slice the fennel bulb and apples and combine them in a bowl.
Make the dressing: put olive oil, lemon juice, salt and pepper in a jar and shake until well mixed. Drizzle over the fennel and apple and mix well.
Shave thin slices of hard cheese into the apple and fennel and enjoy! For a variation add toasted walnuts before serving.
