Jonah’s Fennel Apple Salad


SERVES: 2 TO 3 TIME: 10 MINUTES


Ingredients

  • 2 fennel bulbs

  • 2 crisp and crunchy apples

  • Hunk of hard cheese, such as parmesan or romano 

  • ¼ cup olive oil 

  • Juice of 1 lemon

  • Salt and pepper to taste (approximately ½ teaspoon salt and ¼ teaspoon pepper)

 

Instructions

Use a mandoline or knife to very thinly slice the fennel bulb and apples and combine them in a bowl.

Make the dressing: put olive oil, lemon juice, salt and pepper in a jar and shake until well mixed. Drizzle over the fennel and apple and mix well.

Shave thin slices of hard cheese into the apple and fennel and enjoy! For a variation add toasted walnuts before serving.
